Blow Your Mind!!!!!!!! Corn Pie





This Corn Pie is the ultimate side dish. It's sweet and delicious! You've got to give it a try.





Ingredients:

2 cans Whole Corn, drained
2 eggs
1 large onion, chopped
1 large carrot, grated
4 garlic cloves, minced
1/2 green & yellow bell peppers, diced
2 pimento peppers, chopped
1/4 cup parsley, chopped
1/4 cup green onions, finely chopped
2 cayenne peppers, finely chopped. (seeds can be removed if you don't want it too spicy)
1 tsp salt
1/2 tsp black pepper
1 1/4 cups evaporated milk
4 tbsp flour (plus more if needed)
1 1/2 cup grated Parmesan cheese
1 tbsp olive oil

Method:

In a saucepan over medium heat, pour in your oil. Once heated, add in the onions. When the onions are translucent, add the remaining veggies excluding the garlic ( carrots, bell ,pimento and cayenne peppers, green onions, parsley).  Once all the veggies are cooked through and softens, turn off the heat and let cool.

In a bowl, whisk together the eggs, milk and flour. If the mixture is a bit too runny add in some more flour. We want mixture to be a bit thick. Season with salt, pepper and garlic. Whisk together one last time and set aside.

In a separate bowl, combine the veggie mixture, corn and 1 cup cheese also sprinkle a pinch of salt and black pepper. Transfer to a buttered baking dish then pour over the milk and flour mixture. Give the baking dish a giggle to ensure that the milk mixture is distributed evenly. Top with the remaining cheese and baked at 350 degrees for 30 mins or until golden brown.
