Lunch for one?? Easy Pork Chop with Roasted Vegetables.




After a long day of doing chores around the house, I didn't want to spend too much time on lunch. I wanted something filling that won't take to much effort. This meal is one of the simplest and easiest to put together, Everyday veggies with minimal seasoning. I didn't want to overpower the simplicity of the dish by adding a bunch of complicated seasonings. Everything is done in one pan which makes for an easy clean up. It's visually pleasing and taste just as good as it looks.
This meal can be made for date night with that special someone, dinner with friends or as I did for lunch.

Homemade Green Seasoning



Green Seasoning is a Caribbean staple. It is used in almost all recipes. People usually buy a bottle at the local supermarket but those of us who love to cook, prefer to make it from scratch. It's a simple recipe,with lots of the everyday veggies. I don't use precise measurements, I usually eyeball it and put more of what i like to taste.
 I guarantee that once you make and use the recipe, you won't ever buy the bottled stuff again.
And you get the satisfaction of knowing exactly what's placed in it.


Creamy Bell Pepper Risotto with BBQ Sauce Baked Chicken.




Today I wanted to try something a bit fancy but easy to pull together for dinner. I've had this packet of Arborio rice for about 2 months now and I finally decided to use it. I was a bit nervous because I've never made risotto before but i knew i wanted to take a swing at it.
I've watched enough cooking videos on how to make it, so i was pretty comfortable once i got started. All risotto dishes requires the same process but it's the different ingredients you put in it that makes the dish uniquely yours.
I wanted to pair the risotto with another simple but flavorful dish. Since risotto is a delicate dish, you can't put strong spices or a bunch of ingredients in it. I decided to pair it with chicken that's packed with flavor but not strong enough to over power the delicateness of the risotto.

Fried rice with plantain sauteed in garlic butter,stew chicken and salad




Today i decided to do something out of the ordinary for lunch. Instead of the normal white rice and chicken, i thought I'd go with fried rice and stew chicken with peas and since i currently have a huge amount of plantain in my backyard, i wanted to try something different. Instead of the regular boil in salted water, i thought I'd go the extra mile and saute them in a garlic infused butter.
The garlic adds another level of flavor to the plantains and the butter makes it moist and rich.
My first attempt at fried rice went surprisingly well, although it's a bit lighter in color than I'd hope but it tastes great. I wanted to finish the dish with a simple salad, lettuce and tomatoes tossed with a mixture of olive oil, salt, black pepper,lime juice and minced garlic.  :)
