Lunch for one?? Easy Pork Chop with Roasted Vegetables.




After a long day of doing chores around the house, I didn't want to spend too much time on lunch. I wanted something filling that won't take to much effort. This meal is one of the simplest and easiest to put together, Everyday veggies with minimal seasoning. I didn't want to overpower the simplicity of the dish by adding a bunch of complicated seasonings. Everything is done in one pan which makes for an easy clean up. It's visually pleasing and taste just as good as it looks.
This meal can be made for date night with that special someone, dinner with friends or as I did for lunch.






Easy Pork Chop with Roasted Vegetable.





Ingredients:

1 Pork Chop
1 small onion, peeled and quartered
1 large potato, peeled and chopped
1 medium tomato, quartered
1 ear of corn, cut in half then quartered
1 plantain, boiled and sliced
4 garlic cloves, grated
2 tbsp chopped fresh parsley
1/4 cup olive oil
2 tsp salt
2 tsp black pepper



Method: 

Preheat your oven to 350 degree F.
In a bowl,whisk together oil, parsley, garlic, salt and pepper for about 3 minutes,so that the garlic and parsley are infused in the oil.
Place your room temperature pork chop on a plate and smother it with some the garlic parsley oil, use your hands and ensure that the oil coats every inch of the pork.
Place your veggies in a bowl, pour the remainder of the garlic parsley oil over them, give them a quick toss to ensure that they all are covered with the oil.
Line a baking dish with foil, place your chop in the middle of the pan and surround it with the veggies.
Place in oven, and bake for 30 minutes. In the last 5 minutes, place the sliced plantain in the pan to heat up.
When serving, place a tsp of butter on top of the hot pork chop. ENJOY!!!!!!!  :)
