Creamy Polenta

Soft polenta, blended with plenty of cheese and butter, is lusciously creamy and becomes the delicious base for my Turkey Bolognese.

Ingredients:

1 cup Yellow Cornmeal
3 cups water
1 cup milk
4 garlic cloves, minced
1 tbsp salt
1 tsp black pepper
1 cup grated cheddar cheese
2 tbsp butter

Method:

1. Place the water, milk and garlic in a large saucepan over medium high heat and bring to a boil. Once boiling, Reduce the heat, add in the salt and pepper and slowly pour in the cornmeal whisking constantly so that there isn't any lumps.

2. When the mixture starts to thicken, which should take about 6-10 minutes ( or less, depending on the type of cornmeal you use), switch out your whisk for a wooden spoon. Continue stirring for 4 more minutes.
If the mixture is a bit too thick, you can add in some more milk. Remove from the heat, and add in the butter. Once the butter is almost melted, add in the cheese and stir. Taste and adjust the seasoning if needed.

Serve this with my Easy Turkey Bolognese sauce. It's a great meal for a romantic date night and I promise your spouse will be really impress  by the taste and the effort you put into this meal.

Enjoy!!!!
