My dad's Birthday Dish. Curry Seafood Mix (Shrimps,Octopus,Scallops & Clams) with Rice
July 25th is a very special day. It's the day that my grandmother gave birth to the most amazing man I've ever known, MY DAD!!!!!. He's a very simple man and not so much into eating exotic or "fancy" meals. So I wanted to do a dish that's out of the ordinary for him, something he would appreciate. Whilst in the supermarket,I stumbled upon a bag of seafood mix, I thought that would make a perfect meal for him.
Ingredients:
1 pk Seafood Mix
1 pk Sazon
3 Garlic cloves, minced
2 tbsp Parsley, chopped
1 tsp Curry powder
2 medium sized Potatoes, diced
1 1/2 tsp Cayenne pepper
1 Chili pepper, chopped
1 1/4 tsp Black pepper
1 1/2 tsp Salt
1/2 tsp All purpose seasoning
Cooked Rice to serve.
Method:
In a sauce pan, bring some water to a boil, add in 1/2 pack of Sazon, 1 tsp cayenne pepper, 1 tsp black pepper,1 tsp salt and seafood mix. Let it boil for about 5-7 minutes. Transfer the seafood to a bowl and reserve about 1/2 cup of the broth. In a large sauce pan on medium high heat, add in the curry powder and the reserved seafood broth. Cook for 6 minutes or until the liquid reduces by half. Add in the garlic, potatoes, remaining seasoning, leaving the parsley for last and 2 1/2 cups of water. Cook until the potatoes are folk tender, then add in the seafood. Reduce the heat to low and cook for another 5-8 minutes or until the mixture thickens. Toss in your parsley, give it a stir and you're done.
Serve this over some plain white rice or with veggies.

Note: If you're not a big fan of spicy food, you can omit the chili pepper or if you like the heat but not too much, you can add in half of the chili pepper or about 1 tsp pepper sauce.
