Chicken Fajitas Pasta



This meal is one of my favorites, it's so simple to make and packed with flavor. It's creaminess makes it a hit with children and it's a great way to sneak in some veggies. This one is sure to disappear quickly.





Ingredients:                                                                   Serves 2-3

1 green bell pepper, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 tablespoons oil
2 chicken breasts, cut into chucks
1 onion, sliced
1 tablespoon chili powder
1 tablespoon cumin
3 garlic garlic cloves, minced
1 tsp  salt
1 tsp black pepper
5 cups milk
2 cups penne pasta
1/2 cup cheddar cheese, shredded

Instructions:

In a large pot over high heat, pour in the oil.
Add the chicken and cook until no pink is visible, then remove the chicken from the pan. Place on a plate.
Add in the bell peppers, garlic and onion, cooking until the onion is translucent.
Add the chicken back to the pot with salt, pepper, chili powder, cumin, and garlic powder, stirring until evenly coated.
Add the milk and the penne, stirring constantly to prevent any pasta from sticking.
Cook for about 8-10 minutes until pasta is cooked and the milk has reduced to a thick sauce that coats the pasta.
Add the cheese and mix until melted.
Serve and Enjoy!!!!



Note:
You can add any type of vegetable you like. You can omit the milk and cook in chicken broth for a healthier version.
