What's more comforting than a hearty pie for lunch. This dish i'm sure will keep you full throughout the day. It's simple but full of flavor.
Ingredients:
4 small Dasheens or 1 large dasheen, peeled and diced
5 potatoes, peeled and diced
1 1/2 cups coconut milk plus more if needed
1 1/2 cups grated Parmesan Cheese
4 garlic clove, grated
1 1/4 tsp onion powder
1 1/4 tsp all purpose seasoning
1 tsp black pepper
1 1/4 tsp salt, plus more if needed.
Method:
Preheat your oven to 400 degrees F. Grease a 13 by 9 baking dish with 1 tbsp of butter or spray with nonstick cooking spray and set aside.
Cook the potatoes and dasheen in a large pan of boiling salted water until they are very tender,about 15 to 20 minutes.
Drain and place in a large bowl, mash the potatoes and dasheen until smooth.
Add in the coconut milk, garlic, onion powder, all purpose seasoning, salt and pepper and 1 cup of the grated cheese.
Mix all the ingredients together using a spoon or spatula, to ensure that the seasoning gets distributed evenly.
If the mixture is a bit dry, add in some more milk.and Keep tasting, to ensure that it has enough seasoning.
Transfer the mixture to the baking dish, spreading it evenly. Top with the remaining cheese and sprinkle with a pinch of black pepper. Place in the oven and bake until top is golden brown, about 20 minutes
Remove from oven and let cool for 5 to 10 minutes before serving.
